What is a ‘galette’ you may ask?  It’s a lazy-pie!  You could call it ‘rustic’ if that makes you feel better about yourself.  I got a handful of nice peaches at the farmers market and wanted to make something with pastry but didn’t feel like putting forth a lot of effort; thus this galette was born.

DSCN5406Peach Galette with Bourbon Crust

Serves 4-6 – cost approx $.55 per serving


  • Pie crust ingredients for a 9 inch pie ($1)
  • 2 Tbs Bourbon
  • 3 nice peaches ($1.50)
  • vanilla sugar, to taste
  • pinch cinnamon
  • pinch nutmeg
  • 1 Tbs cornstarch

I know, everyone is really attached to their own pie crust recipe and the butter vs shortening debate rages on.  I use the Williams and Sonoma recipe and it’s always worked for me.  To make your pie crust more ‘bourbon-y’ replace a couple of the tablespoons of cold water in your recipe with some bourbon.  A little booze makes it so much better!  Plus, it’s a nice excuse to pour yourself something on the rocks…

For the filling, slice the peaches thinly and mix with all the remaining ingredients.  If your peaches are really sweet and juicy, you may want to add only a few tablespoons of sugar but if you have a penchant for sweet-sweet pies, add up to a half of a cup of sugar.  Roll out the pie crust and lay it on a baking sheet.  Lay the peach slices nicely into the middle of the pie crust

DSCN5396Sprinkle with a touch more sugar and bake at 375 F for 30-45 minutes or until golden brown and bubbly!
